I've found it impossible to do this with the result of graphql strings. But it would be so cool if you could. Basically, you could take this string:
graphql(` query Test { me }`)
Right click on me → Rename Symbol → user and it would result in this:
graphql(` query Test { user: me }`)
And since gql.tada uses TypeScript, I wonder if there could be a way for it to hook into the TS Rename Symbol functionality such that this name change propagates everywhere based on its types...

Rename Symbol
