This pull request introduces Sentry release tracking to the project.
It adds the "sentry-project" parameter to the deployment workflows for Development, Staging, and Production environments.
Additionally, the Dockerfile is enhanced with new build arguments and environment variables, including "VERSION" and "ENVIRONMENT," to facilitate version-specific Sentry tracking. They are coming from
biip-deployworkflow.Additionally Sentry service is updated to include relevant integrations for HTTP calls and PostgreSQL, and the release and environment information is now properly captured for error monitoring and performance insights.
