This pull request introduces Sentry release tracking to the project.

It adds the "sentry-project" parameter to the deployment workflows for Development, Staging, and Production environments.

Additionally, the Dockerfile is enhanced with new build arguments and environment variables, including "VERSION" and "ENVIRONMENT," to facilitate version-specific Sentry tracking. They are coming from biip-deploy workflow.

Additionally Sentry service is updated to include relevant integrations for HTTP calls and PostgreSQL, and the release and environment information is now properly captured for error monitoring and performance insights.
