would you want to select the category live during the session? Or would you want to select a category, instead of questions, when the quiz is designed ahead of time?
I think the questions would have to be added to the quiz at some point, but it might be possible to do that automatically when the quiz is run. One would have to look into the details of the code to know what is possible.

I have given this some more thought and here is what I think would be the most versatile and pedagogically effective approach:
As a teacher, I would like to be able to start a session without having to "add" any questions beforehand.
I would then want to be able to choose different categories (and tags) and give my students different questions (random or not) depending on how the session evolves.
Obviously, I understand that it may not be technically possible.
