Add Data V2 multi symbol latest endpoints

In this release we add:

• Latest bar and latest bars endpoint
• Latest trades and latest quotes endpoint
• From now on configuration is an optional parameter in REST calls
• Use gzip encoding when accessing data v2 REST endpoints
