Docs: update SAM CLI templates with v2

What were you searching in the docs?

The SAM CLI has templates that help customers quickly set up functions. Powertools has a handful of these templates and with the release of our v2 we should update the templates to reflect the latest and greatest.

How can we improve?

After a couple of iterations (~4 weeks) from the v2 launch we should update the templates to use v2. The reasoning is that by that time customers will have had the time to try the new version and report major bugs (if any).

Got a suggestion in mind?

We can, but don't have to, take inspiration from the work done in #1103.

Opened a PR to the SAM CLI templates repo: aws/aws-sam-cli-app-templates#500

The PR was merged and the updated templates will be made available in the next SAM CLI release.

SAM CLI v1.115.0 includes the updated templates that cover v2.
