Adds demo version to packer variables

Updates packer variables to pull the "version" string out of wombat.yml. Can be used in bjc and similar for tagging AMIs on build.

Infranodes can now be built with linux or windows as the underlying OS. In wombat.yml, simply add "platform: windows" to the associated node, and it will use the appropriate template, and use proper windows pathing for Chef defaults.
