There are multiple ways we can measure this. The simplest way is to see who scores the most points for a team each week and then sum the number of times each player leads the pack. Could also rank players based on cumulative or weekly average points scored.
Future work
Another idea is to use a concept of analyzing how "irreplaceable" a player is. I think this is similar to WAR in baseball. The idea would be to see how an individual game's outcome would change if you replaced each player with the week's average player (a virtual player) at that position. For example, if I summed the average first string RB score for the week and replaced whatever Derrick Henry scored that week, would it drastically impact the result of my game? Would I have still won (or lost)?
