Need to find a good way for the udp part with influxdb

Test now with : "ESPinfluxdb.h" library

I was not aware of any issue communicating with influxdb on previous deployment. Are you trying to run a different configuration?

the initial target of the project is without grafana.
But for use grafana is better with a good data synthesis, and this is possible with this library.

The UDP communication is
