Update the maintained branches table in README.md to reflect that we no longer maintain `release/v5` or `release/v4` due to the associated versions of ibc-go being EOL.

@jtieri There is no way to fix this audit check. Last I tried, upstream CosmWasm has to fix versions, then this has to import that. So we just merge with failing. I really dislike it. Maybe we only run audit on code that touches the cosmwasm/polytone repo for now? This way other workflows are not touched, the point of ibc-apps |
