Describe the bug

The function dbt_utils.safe_cast is not listed in the cross database utils section of README.md.

Are you interested in contributing the fix?

Not at this time as I feel someone should go through all the functions in the package and cross check with the documentation and I unfortunately don't have the time or resources to do this.

Just wanted to mention that I also though that safe_cast was missing from dbt_utils documentation, but realized that it belongs to dbt-core.
