I don't really bake cookies.
Pfefferneusses
113g light molasses
75g butter
50g egg (1)
280g flour
66g sugar
1/2 tsp (~3g) baking soda
1 tsp (~2g) cinnamon
1 tsp (~2g) ginger
1/4 tsp (~0.5g) cloves
1/4 tsp (~0.5g) nutmeg
1/8 tsp salt
1/8 tsp pepper
Melt butter into molasses. Stir in beaten egg. Slowly add combined dry
ingredients sing hands. Makes 70 @ 8g (~1tsp). Fits 50 on a half sheet pan,
staggered 6-5-6-5-6-5-6-5-6. Bake 10-12m @ 375F.
Spiced Rye Cookies
212g rye flour
1 tsp (~6g) baking soda
1/2 tsp (~3g) salt
2 tsp (~3g) ginger
3/4 tsp black pepper
1/2 tsp cinnamon
1/2 tsp cardamom
150g sugar
100g oil
50g egg (1)
85g molasses
Mix dry ingredients. Set aside. Combine sugar and oil, then eggg and molasses. Add dry ingredients.
Mix and chill. Portion into 20g cookies. Roll in sugar. Bake 12-14m @ 325F.
(Use 1 cup measure for weighing sugar/oil/molasses, in that order.)
