Restructure test strings

Chatted to Viviana and we're finding that Alike, google/fonts#6930 doesn't show any test strings. This is happening because test strings for a glyphset are only shown when the family's glyph coverage for a glyphset is above 95%. Instead, I may only show test strings if the font has all the characters for the given string,
