The mobile web images directory structure contains two default folders:
The 'touch' folder is for iOS app icon images, and contains all the various sizes needed for iPhone/iPad in both retina and standard resolutions.
The 'startup' folder is for iOS startup images, and contains all the sizes needed for both iPhone/iPad in both retina and standard resolutions. There are also both portrait and landscape images for iPad the versions.
