Trying to understand greyed out, non-boxed completion choices.

Hello, I have the plugin working beautifully for snippets calc, Copilot, etc., (config snippet for key mapping, which is my main question below) however, there's something going on that I feel like I'm missing out on that no key combo will allow me to complete.

What's happening is popping up in insert mode and not in a dialog box, so I'm not even sure if it's nvim-cmp or something else but hopefully someone here can help me understand what is going on.

In the animated GIF below you will see me go to a new line and the greyed out text will pop up that says

" Set our GUI font for VimR

Yet, I have no way to complete it, except typing it in letter-for-letter.
