Add sample server repo link to docs #156

Hello, I spent a bit of time understanding the library and putting together a sample project that uses the default server metrics and publishes them to a Grafana dashboard.

I thought this might be generally useful to people looking for information on how to use this library, so I have included a link to the example project in the docs.

Please feel free to use as is or clone the whole repo if you want.

I'm sorry it took me so long to see this! I get overwhelmed with GitHub notifications and sometimes miss the important ones.

This is excellent work. I think it would be wonderful to fold this into documentation in this repo somehow, but this is a great first step in its current form. Thank you so much!

Random thoughts: most existing docs tooling is geared toward examples that can be compiled and run inline (e.g., mdoc; formerly, tut). We don't have anything so obvious for full Docker setups. Maybe a separate repo really is the best way. 🤔
