[Request] Open up /.well-known/openid-credential-issuer for custom entries

Description

Make this endpoint configurable such that we can include our own data in it, specifically we'd like to modify supported DID methods and signature algorirthms.

Motivation

Our backend supports a different set of methods and signature algorithms than UniCore. UniCore's methods are irrelevant to us since we use its event system and external sources of truth for identities and credentials anyway.

Requirements

"Freetext" DID methods and signature algorithms as well as proof types.
