Updates redb to latest released version, from the changelogs it looks like there was quite a few bugfixes since 1.0.1.

Is it common to bump versions in Cargo.toml when we don't actually need them for the project to work? Projects dependending on bevy_pkv could just do cargo update?

If there are serious issues in redb it might be good to force people over, but sometimes people would perhaps want to consolidate dependencies for minimal build size/time?

Not that this is a huge point... just wondering what the convention is.

Had a quick look at the redb changelog, and I think I agree, better to force people over to the new version.
