In JupyterLab, you can use multiple types of editors to open files. E.g for notebooks you can open as a rendered notebook, as raw text, or as a JSON tree renderer. Jupyter FS should be able to support this through a similar "Open With" command + context menu entry, instead of its current behavior of only using the default editor via the "Open" command.
