[prometheus-thanos] add default security context

What this PR does / why we need it:

This PR:

• Upgrade Thanos to the latest stable version
• Add default security context for Pods and Containers to support new default user id feat: Use non root user as default user in container image thanos-io/thanos#6107

Which issue this PR fixes

• fixes Thanos Receive container not starting w/ v0.32.x thanos-io/thanos#6798

Yeah, this isn't related to the changes in this chart. There is an issue with the helm version in the other charts from this repo. I have tried to fix that but in #468, it is still open.
