Update to use inkjet 0.11.x

Inkjet 0.11 came out recently, and improves language support in a marked way.

Unfortunately it does have a few breaking changes, mostly around things like the replacement of once_cell with a LazyLock, which throws a lot of compiler errors if one tries to naively update (like I just did)

Hey @paradox460 that's on my radar. Recently I've been experimenting an integration with Zed grammars and themes, which would replace Inkjet and Helix themes. The down side is less themes but Zed has higher quality grammars and themes and an active community and model that works better, especially on the long term.
