additionalEndpoints / _api routes can't access import.meta.*

Unlike in vike-cloudflare, functions are not passed through vite/rollup in vite-plugin-vercel. This means they can't use features like import.meta.env, etc.. vite build config also don't apply to them

Can we make it similar to vike-cloudflare?

It would be a good idea indeed.
It's a somewhat big refactoring, so not a big priority on my bucket list right now.
