Add operator defaults for common configuration settings

Some fields in a Custom Resource Definition may typically be the same for all resources.

For example an organization may have a regular container image to use that has some local modifications - perhaps connectors, security enhanced etc.

Whilst this can be configured in individual CRs, it may be more usable to allow some of these to be specified at the operator level itself - the most obvious example being this image
