Moved from #402 issue description.

We can leave the old replica server online for 1 year, until we no longer need the data it contains.

After one year, if there are any collections we want to migrate, we can dump/backup the compiled releases, possibly as documented here: https://ocdsdeploy.readthedocs.io/en/latest/use/kingfisher-process.html#export-compiled-releases-from-the-database-as-record-packages
