Context

As a conclusion out of #136.

PostgresDB and CockroachDB becoming first class databases keycloak/keycloak#10404.

So CockroachDB is properly supported database in the future. Keycloak is going to test against it and this makes it more recommenable than any other distributed database or HA postgres setup, which will not be tested in the same matter.
Depending on the required effort deploying CockroachDB via helm chart, this might be worth it.
