Maple Mustard Chicken

Based on Man-Pleasing Chicken

Ingredients

  • ~6 bone in with skink chicken thighs
  • 1/2 cup Dijon mustard
  • 1/4 cup maple syrup
  • 1 tablespoon rice wine vinegar
  • Fresh rosemary, chopped, to taste, to garnish
  • Salt
  • Pepper

Preparation

  • Preheat oven to 450ºF.
  • Mix dijon mustard, maple syrup, and rice wine vinegar.
  • Brown chicken in cast iron skillet seasoning with salt and pepper
  • With chicken still in skillet pour maple mustard mixture over them, turning the thighs in the mixture so they are fully coated.
  • Bake for 40 minutes or until a meat thermometer reads 165ºF.
  • Baste the tops of the chicken with more sauce halfway through if desired.
  • Let chicken rest for 5 minutes before serving. Plate the chicken, making sure to spoon some extra sauce over the top. Sprinkle over some fresh rosemary. Serve immediately.

Serves well over brown rice with a side of roasted broccoli
