Is your feature request related to a problem or use-case? Please describe.

After #1723 is merged, we need to extend our automation in https://github.com/shipwright-io/build/blob/main/.github/workflows/check-latest-images.yaml to update the BuildKit version automatically once there is one.

Describe the solution that you would like.

Nothing special, just extend the script. Take care to stay on the rootless image.
