Keep docker-compose files up to date. Currently using version 2, latest version 3.4

We just need to make sure we don't use a version above the one we use for our internal deployments. I'm going to check

It's ok, we can switch to v3 for the docker-compose.yml, but we'll have to switch from docker-compose command to docker stack deploy in our Jenkinsfile & README.md
