Fix Site: Switch package.json version value from workspace:^ to latest

Some sections of the site is broken such as main header dropdown menu not opening, table header not changing styling when scrolling past section, table header not updating section name and tooltip missing tail. These sections of the UI are depending on the packages that use workspace value.

Updating package.json version value from workspace:^ to latest fixes these issues.
