build(deps): bump crypto-js and symbol-sdk

Removes [crypto-js](https://github.com/brix/crypto-js). It's no longer used after updating ancestor dependency [symbol-sdk](https://github.com/nemtech/symbol-sdk-typescript-javascript). These dependencies need to be updated together.


Removes `crypto-js`

Updates `symbol-sdk` from 2.0.5 to 3.1.0
